June is here! I love the cold season because there are so many ways to keep warm; like baking a cake and having it with some nice hot beverage. This is almost like a continuation from last month’s recipe. What I like about this recipe isthat it’s one basic rich cake split in two. To one, we will add banana and to the other, cocoa powder.
I usually get comments from people like ‘’my cakes are always dry/hard’’ or “my baking never comes out right’’. Remember, baking is like a scientific process, measure your ingredients properly, follow my instructions and you’ll do just fine. The recipe is simple and a must try.
INGREDIENTS
- Margarine (soft) 300g
- Icing sugar/confectioners’ sugar 300g
- 6 eggs
- 4 cups cake flour
- 4 tsp baking powder
- 500ml milk
- 6 tsp cocoa powder
- 3 over-ripe bananas (mashed/pureed)
- 1 tsp vanilla essence/extract
METHOD
- Preheat oven to 180 degrees C/356 F
- In a large bowl, cream the margarine and sugar till its white and fluffy
- In a separate bowl, crack some eggs and whisk with vanilla essence/extract
- Add the eggs to the margarine and sugar mixture in batches, a little at a time (approximately about 3 TBSP). Mix well till it disappears before adding the next amount of eggs. Be patients at this stage.
- Sieve the flour and baking powder and add into the bowl; then mix well.
- Add 1 ½ cup of milk and mix them.
- Split the mixture into two bowls.
- Add cocoa to one and the other, add the banana.
- Equally divide the milk in both bowls. Ensure the mixtures are relatively watery/runny (not too thick)
- In a greased baking tray (or parchment paper). Alternate the cake batters (the banana then the chocolate and so forth).
- Using a large skewer or toothpick, run it down vertically a few times (please don’t overdo it)
- Place it in a preheated oven and bake for 25-30 minutes or until a toothpick inserted comes out clean. Enjoy!!!
Chef Tips and Insight
- Serve with custard sauce.
- Do not add the eggs all at once, your cake will sink in the middle.
- Ensure to mix margarine and sugar till white and fluffy. This makes the cakes have a fluffy texture.
- Mash up the banana till it’s really fine.
- Do not open the oven door so often, cold air will rush in and cause the cake to sink.
- Time the baking in the oven to avoid over baking and having a dry cake.
