For our last month of budget friendly meals, we'll end it off with a vegetable mix. Its super easy and very tasty. For most people, butternuts are usually cooked using the boiling method. Have you ever had them baked? Try some today.

INGREDIENTS
2 TBSP Oil(sunflower/Olive)
Salt and pepper to taste
2 l are Baby marrow (cut into cubes)
2 large butternut squash( peel and cut into cubes)
2 large carrots(peel and cut into cubes)
1 large firm tomato (cut into large wedges)
Dry or fresh basil
METHOD
1. Preheat oven(bake) to 200 degrees C.
2. Wash and cut all ingredients.
3. In an oven tray, add cut butternut squash, carrots and baby marrow.
4. Add salt, pepper and oil. Mix well.
5. Bake for about 25 min or until vegetables are cooked through. Add tomatoes when done and bake for a extra 5min.
6. Garnish with a little basil and serve immediately with whatever roasted meat available or on its own. Enjoy
Chef Tips
· Be creative and add any other vegetables that are available and will go well with the mix.
