Impossible Pie

I definitely haven't made this up, the pie is really called "Impossible pie". It became popular in the 70s and is believed to have originated from the Amish. This is a very intriguing pie; it separates into 3 layers. The flour sinks to the bottom to create a tart-like dough, the sugar, egg and milk create a creamy custard center and the coconut rises to the top to make a nice crunchy crust. Speaking of impossibilities, its almost impossible for you to not have either been affected or infected by the third wave of the pandemic. With life being viewed from a more precious lense than before, let's enjoy this delicious Impossible Pie with our loved ones but also ensure to prepare for the possible and certain eternity of your soul.

 

Ingredients

65gCake flour

1g baking powder

200gicing sugar ( a.k.a granulated sugar)

113gmelted margarine (should be cooled to room temperature)

4 eggs (large)

480ml full cream/full fat milk

1tspvanilla essence/extract

125gdry coconut flakes

 

Method

1.     Preheat oven to 180 degree C (bake).

2.     Carefully grease your baking tin.

3.     Using a wire whisk, mix the eggs.

4.     Mix the flour, baking powder, sugar, margarine and vanilla essence/extract in a separate bowl.

5.     Add eggs to the flour mixture and whisk till a smooth batter is formed.

6.     Finally, add the dry coconut flakes and mix well.

7.     Pour batter into baking tin. Bake for 50-60 minutes.

8.     Allow to cool for a few minutes and serve warm. Enjoy!

 

Chef Tips

1.     When the pie is ready, the top turns golden brown and a toothpick inserted comes out clean.

2.     If you're using a food processor, add all the ingredients except the coconut and mix. Add the coconut flakes at the end.

3.     Please ensure your measure your ingredients accurately.

4.     Ensure the margarine being used is safe for baking.
