Ingredients
Cake flour 195g
Chocolate chips ½ cup
Baking powder ½ tsp
Baking soda ¼ tsp
All spice mix 1 ½ TBSP
Butter 170g(room temperature)
Brown sugar120g
Eggs 3(large)
Plain pumpkin puree 130g
Vanilla flavour extract 1 tsp
Method
1. Preheat oven to 180 degrees C and grease a loaf tin.
2. In a large bowl, mix all the dry ingredients together (flour, spices, baking powder, chocolate chips).
3. In another bowl, beat butter until smooth. Add sugar and beat till light and fluffy.
4. Add eggs, one at a time. Mixing well before adding the next.
5. Add the vanilla and mix well.
6. Fold in the flour and mix well.
7. Finally add the pumpkin puree and mix well.
8. Bake for 60 minutes.

· This cake goes well with cream cheese frosting.
· You can make your own pumpkin puree (bake till tender and blend) or purchase canned.
