It’s another cold season but very different from the previous ones we have experienced. We are currently adjusting to the ‘’new normal’’ of living.
To help keep us warm this June, we can bake some cake. Cake is a good accompaniment with a hot cup of tea. What I like about it this recipe is that it’s one basic rich cake split in two. To one, we will add banana and to the other, cocoa powder. Remember, baking is like a scientific process, measure your ingredients with care, follow the instructions and you’ll do just fine. The recipe is simple and a must try. Remember to keep safe.
INGREDIENTS
Margarine (soft) 300g
Icing sugar/confectioners’ sugar 300g
6# eggs
4 cups cake flour
4 tsp baking powder
500ml milk
6 tsp cocoa powder
3 overripe bananas (mashed/pureed)
1 tsp vanilla essence/extract
METHOD
1. Wash your hands with soap for at least 20 secs.
2. Preheat oven to 180 degrees C/356 F.
3. In a large bowl mix margarine and sugar till white and fluffy.
4. In a separate bowl, crack eggs.
5. Add eggs one at a time to the margarine and sugar mixture in batches. Mix well before adding the next egg. Bepatient at this stage.
6. Add vanilla extra/essence and mix well.
7. Sieve flour and baking powder and add into the bowl; mix.
8. Add 1 ½ cup of milk and mix.
9. Split mixture into two bowls
10. Add cocoa to one and the other, banana.
11. Equally divide the milk in both bowls. Ensure the mixtures are relatively runny (not too thick /watery)
12. In a greased baking tray (or parchment paper). Alternate the cake batters (banana then chocolate and so forth).
13. Using a large skewer or tooth pick, run it down vertically a few times (don’t overdo it)
14. Place in a preheated oven and bake for 25-30 minutes or until a toothpick inserted comes out clean. Enjoy!!!
Chef Tips and Insight
1. Serve with custard sauce.
2. Do not add eggs all at once, your cake will sink in the middle.
3. Ensure to mix margarine and sugar till white and fluffy. This makes the cakes have a fluffy texture.
4. Mash up the banana till it’s really fine. To the banana batter, you can add a pinch of cinnamon powder or nutmeg.
5. Do not open the oven door so often, cold air will rush in and cause the cake to sink.
6. Time the baking in the oven to avoid over baking and having a dry cake.
