Easter Fruit Cake
If the first few months of the year 2020 have not been dramatic, especially living in Zambia, then you've probably been living under some rock somewhere. We are currently trying to recover from the gruesome claws of the Corona virus after a series of "gassers" terrorising the nation. What a timely month it is, the Easter period; a reminder of hope and certainty that we have a resurrected Saviour, Jesus Christ.
Moving slightly away from the traditional Easter fruit cake and bread recipes, we'll make a banana loaf with fresh fruit instead of dry. Its moist and delicious, and give of a try. Even with the trying times we've had as a nation we have a fresh hope this month, happy Easter .

Ingredients
250gmargarine (room temperature), extra for greasing
250gicing/castor sugar
4 large fresh eggs
3 1/2 cups cake flour
3 1/2 tsp baking powder
150 ml milk
2 over ripe bananas (mashed)
Pinch of cinnamon/nutmeg
Method
1. Preheat oven to 180 degrees C.
2. Grease2 small-medium cake loaf tins evenly.
3. Ina bowl, beat margarine and sugar till light, white and fluffy.
4. Add one egg at a time, mixing well before adding the next.
5. Add flour and baking powder in batches and mix.
6. Add milk and mix well.
7. Finally add mashed banana, cinnamon and mix. Bake for 25-30 minutes.
8. Serve with custard sauce, ice cream, youghurt or even as it is. Enjoy.
Chef Tips
· Break the eggs in a separate bowl before adding directly to the mixture, in case one is bad
· Do not add all eggs at once as it will cause the cake to sink in the middle
· Don't not open the oven during baking time as it will also cause the cake to sink in the middle
· Ensure bananas are thoroughly mashed
· To check if the cake is ready, a toothpick inserted must come out clean.
