The festive season is here and it’s time to celebrate and remember the birth of our Lord Jesus. Apart from a time of celebration as well as reflection on how the year has been, it is also a time to eat. This is the period families get together and bond over meals, and you definitely need a handy dish to contribute to the meal. It is not just a matter of cooking; we always want to impress the people feasting and get positive feedback. Here a handy recipe that won’t be time consuming in terms of preparations but delicious too. To my faithful readers, look out for more recipes next year. Have a Merry Christmas and a happy new year.
Whole chicken (rinsed and drained)
2 tsp cayenne pepper
2 tsp garlic powder
2 tsp black pepper
2 tsp paprika powder
1 tsp onion powder
4 TBSP Portuguese chicken spice
Fresh thyme
Large lemon (washed, pierced with a sharp knife and boiled for 5 minutes)
Salt to taste
1. Rinse and drain water from the chicken
2. Open the chicken by cutting through the back and spread it flat
3. Chop fresh thyme leaves and rub on the chicken and place some inside the skin (save some thyme for garnishingthe chicken when its ready)
4. Season chicken with salt around and in the cavity
5. Rub all the spices around and in the chicken generously
6. Preheat oven (bake option) to190 degrees C
7. In a large baking tin, place chicken on foil paper/ parchment paper. The boiled lemon can be put next to it
8. Cook slowly for 2hrs-2hrs 30minutes. (ensure its cooked well and not too dry)
9. As juices from the chicken beg into drop in the pan, using a spoon, scoop the drippings and pour oven thechicken occasionally
10. Once ready, allow to cool and garnish with thyme on top.
11. Carve the chicken at the table and serve. Enjoy!!
1. Marinating the chicken can bed one 48 hours before the actual day for spices to sink in and kept frozen after. Thaw and follow cooking instructions
2. Cover the tip of the wings and drumstick with foil to avoid them burning
3. Lightly slice the breast and thigh area for heat to penetrate
4. Lemon can be sliced and put around
5. The chicken can also be char grilled on medium low heat
