Quiche is definitely not American but a Frenchdish that is a rich custard like meal that has eggs, milk, cheese, vegetablesand meat of your choice which is later baked in a pastry. It can be served atany meal time and can be made with almost anything you have in the fridge. Thisis definitely a must try.
Ingredients (for the pastry)
Ice cold water
75g cold margarine, extra for greasing
175g household/cake four
Ingredients (for the filling)
6 large eggs
200mls of unsweetened fresh cream
200g Gouda/Cheddar cheese (grated)
Strips of fried bacon (cut into pieces)
2 cooked pieces of chicken (shredded)
Red and yellow pepper (cubed)
½ tsp Thyme
Salt and peppered to taste.
Method
In a bowl, add flour and margarine. Rub withfingers till it resembles breadcrumbs.
Slowly add a little water at a time and kneadtill dough comes together. Allow dough to rest for 10 minutes in the fridge.
Preheat oven to 190 degrees C.
Grease medium pastry pan/round hallow cakepan.
On a clean floured surface, roll dough wideenough to fit inside the entire pan.
Using your rolling pin, lift the dough andspread it in and around the pan to fit perfectly. Softly press on top of thedough for it to sit perfectly around and in the sides of the pan.
Excess dough falling over the rim of the pancan be cut.
Lightly make small holes using a fork aroundthe dough. Blind bake for 15-20 mins or until slightly golden brown.
Set aside to cool completely.
In another bowl add all the ingredients for the filling and mix well.
Pour the mixture in the pastry and bake for 20-30 min.
Cut in wedges, serve warm and enjoy!
Chef tips:
You can use any leftover cooked meats/vegetables in the fridge.
Cheese and bacon can be sprinkled on top instead of adding it to the mixture.
