December has finally arrived! I love the festive season; it’s always a happy time and a time of remembrance and reflection on the birth of baby Jesus. If you’ve been following my articles all year, a big thank to you.
We can't end the year without a cake! This Christmas cake is super easy and alcohol free, meaning it can be eaten fresh during the festive holiday and if you wanted an alcohol free cake, this is definitely your go-to-cake. Give it a try and surprise the family.

1 ½ cups butter
3 cups flour
2 tsp baking powder
6 large eggs
½ cup black coffee
½ cup glace cherries
1 ¼ cups brown sugar
1/3 tsp salt
1 ½ tsp mixed spice
250g currants/sultanas
125g dates
¾ cups chopped pecans
1. Preheat oven at 180 degrees C.
2. Make coffee and set aside to cool.
3. Cream butter and sugar till light and fluffy.
4. Add eggs one at a time and mix well before adding the next.
5. Mix the flour and baking powder. Dust the dry fruits in a little flour and add the mixture. Lastly, add the nuts and coffee.
6. Place batter in a greased tin and bake for 35 minutes.
· For this recipe you can use 2,8 inch pan to make 2 cakes.
· It goes very well with custard.
· It tastes great even as is, without frosting.
